Raisins Saffron Rice



  • 1 cup of jasmine rice
  • 2 tbsp olive or corn oil
  • 1 large red onion 
  • 1 chicken breast sliced to small pieces
  • 1 garlic piece (dice)
  • 1/2 cup raisin
  • 1 tbsp red paprika powder
  • 1 tsp black paper
  • 2 pinches of saffron
  • 1 stick of cinnamon
  • 1 tsp salt (optional)
  • 1 tsp cardamom
  • 1 tbsp ginger power
  • 1 pinch of parsley for garnish


1 First heat up the oil in the cook pot. Slice the red onion and garlic first and then the chicken breast to small pieces.
2 Once the oil is heated add the onion, garlic and the chicken.
3 Lower the heat and let fry for 5 minutes.
4 Add the all the mentioned spices to the cooker and blend with the wooden spoon.
5 Add a 1/2 cup of water and the raisin then wait for 3 minutes.
6 Now you can add two and 1/2 cups of water and let it boil.
7 Reduce the heat to medium , add the rice and simmer for 20- 25 minutes. Depends on the quality/brand of jasmine rice you have. 
8 Decorate with parsley and serve it.
